What is bubblegum food flavouring, and how is it used in production?
Bubblegum food flavouring is a concentrated, created confectionery flavouring that delivers the sweet, fruity bubblegum note to a finished product. Bubblegum is not a single fruit. It is a blend of fruity esters, classically drawing on banana, strawberry and cherry notes, that together read as the familiar pink bubblegum character. Manufacturers use it across confectionery, beverages, dairy, bakery and snacks, dosed at low rates so the note reads true through processing and shelf life.
In practice the right bubblegum depends on what you are making. A chewy lolly or gum wants the full nostalgic candy note; a slushie or RTD wants a bright, clean version that holds in a cold acidic base; a soft serve or ice cream wants a rounded profile that carries through dairy or plant fat. We develop to the application and the dose, so the bubblegum reads true in your process and on shelf rather than turning soapy or flat.

Bubblegum is a created confectionery profile, not an extract of one fruit. The character is built from a blend of fruity esters that classically reference banana (isoamyl acetate), strawberry and cherry, which is why two correctly-labelled bubblegum flavourings can taste noticeably different depending on how the blend is balanced.

Natural Bubblegum Flavouring
Built from natural flavouring components to sit on a label as "natural flavour" or "flavouring", for briefs where a natural position is wanted and the formulation backs the wording.
Nature-Identical Bubblegum Flavouring
Often the route to the brightest, most authentic classic bubblegum note, where the brief calls for that character rather than a clean-label position.
Natural, nature-identical and artificial are industry terms (IOFI), not categories defined in the Australia New Zealand Food Standards Code. Under Standard 1.2.4, a flavouring substance is declared on the ingredient list as "flavour" or "flavouring". Any "natural" wording on the front of pack is a representation under the Australian Consumer Law, so we back it with the formulation, not the marketing copy.
